The Summer Heat is good for the Tomatoes, Romano Beans and Fresh Fava! Sweet things too like melons, both watermelon and cantaloupe. Our long missed Burrata Caprese has returned exactly as you like it last summer with basil leaves, Italian Burrata, and balsamic glaze!
New to the menu are Romano Beans, a broad and flat variety with a delicious snap. They hold up well both panfried and stewed. Tonight they debut two ways, tossed in our vegetable mix, and panfried with olive oil, garlic, herbs, a bit of chili flake, and finished with lemon. So healthy!
We could not believe the delicious fresh Fava beans. Did you know they are not beans? The are closer to seeds like lentils and peas. They hold an earthy and nutty flavor that goes so well with aged Grana Padano DOP. They too debut tonight in the vegetable mix as well as mashed with lemon, herbs and covered with micro-planed Grana Padano DOP and served with fresh carrots, crudité style. A great bar snack!
The watermelon is cubed, tossed in a bright and tangy citrus marinade before sprinkled with salty gorgonzola crumbs and garnished with fresh mint. The cantaloup we cut and wrap in a-la-minute sliced prosciutto, the classic traditional way. Stay tuned, for next week debuts our Melon Martini with a crispy prosciutto garnish!
